Maison Pariès : knowledge and respect of raw materials

The Maison Pariès is the last house  lineal descendant of Chocolatiers in Bayonne, created by Jacques Damestoy in 1895. 

The expertise was most often transmitted through women, always with the aim of finding the best products and the highest quality, the house that buys from reputable suppliers, and producers meeting under very strict manufacturing, to name a few:

  • Cocoas fine wines, 100% cocoa, origin: Madagascar, Venezuela, Ecuador, Sao Tome ...
  • The almond producers' Marconas "of Catalonia.
  • The vanilla pods from Madagascar.
  • Etc..

But where do the "Mouchous"?

In a mistake!!

In 1948, a worker of pastry, a little "festailleré", responsible for the manufacture of "Macarons de Saint-Jean-de-Luz," was, not to be reprimanded, came from a hidden buttons whose recipe n had not been respected.

A few hours later, Robert Pariès, discovers the "disaster", he decided, to avoid wasting valuable commodity at that time to cook this mixture, which did not resemble at all to macaroons ... ...

It was then further questioning "laborious" so that our workers up in his memory clouded the composition of his "mistake."

Several days were needed to refine the form and appearance. He needed a name, Robert Pariès decided to call them "Mouchou" francization Basque word "Musu" or "Muxu" which means a kiss. Ramiro Arrue, large Basque painter, took charge of drawing boxes.

The "Mouchou" was born!!
